Baby Potato Fry

Its school time, every day i have to think what to pack for my son. So here i have posted some lunch box recipes.

                                                          Baby Potato Fry



 
Cuisine: South Indian
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Frying Time: 10 minutes

Ingredients:
Baby Potato: 1/2 Kg
Chilly Powder: 1 tea spoon heaped
Turmeric Powder: 1/4 tea spoon
Mustard Seeds: 1/2 tea spoon
Asfoetida: 1 pinch
Reined Oil as needed

Method:
1. Wash the potatoes well in running water.
2. Pressure cook the potatoes in a cooker for 5 to 6 whistles.
3. Allow it to cool completely and then peel the skin off.
4. Place a pan on a stove and add  1 tea spoon of oil.
5. When the oil is hot, add in mustard seeds and allow it to splutter add a pinch of asfoetida.
6. Add the boiled potatoes to the pan and add in chilly powder, turmeric powder and salt. Mix it well.
7. Close the pan with a lid. Let it stay for while, in-between add 1 tea spoon of oil and toss it for 5 minutes.
8. Switch off the flame and cool  it. Transfer it to a serving bowl. Serve it along with any variety rice like coconut rice, tamarind rice or with simple curd rice.
